Apple and Pomegranate Salad

Ingredients
Salad
- 2 EverCrisp® apples, thinly sliced
- 6 cups mixed greens (like baby spinach, arugula, spring mix)
- ½ cup pomegranate seeds
- ⅓ cup crumbled feta cheese
- Optional: ¼ cup toasted walnuts or pecans
Dressing
- ¼ cup extra virgin olive oil
- 2 Tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 tsp maple syrup or honey
- Salt and freshly ground black pepper, to taste
Directions
- Add mixed greens to a large serving bowl or platter
- Layer sliced EverCrisp® apples and scatter pomegranate seeds over top.
- Sprinkle with crumbled feta and toasted nuts
- Whisk together balsamic vinaigrette ingredients just before serving. Toss gently to coat.
